The base of the 2017 B5B White is Pinot Gris; we split this into two parts and ferment separately. The first part is destemmed, gently perssed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting in the foudre we introduce Rielsing, Chardonnay & Fiano juice at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy.
